6 eggs
2 onions
2 peppers
2 tomatoes
150 g chicken meat (pre-cooked)
3 slices of prosciutto (optional)
150 ml CREMIO cooking cream
100 g My Day cheese
30 g butter
Parsley
Black pepper
Salt
Sauté the onions in melted butter, then add the chopped peppers. Peel and dice the tomatoes, then add them to the mixture. Balance the acidity of the tomatoes with a pinch of sugar and stir well. Let the mixture simmer on low heat for 10–15 minutes. Add the pre-cooked chicken, chopped into small pieces, and the prosciutto (if using). Stir thoroughly and season with salt and black pepper.
Add the cheese and eggs, stirring vigorously. Finally, pour in the CREMIO cooking cream and let the mish-mash simmer on low heat for 2–5 minutes. Garnish with chopped parsley before serving.
