Lamb Chops with Creamed Spinach

6–8 lamb chops
300 g spinach
200 ml CREMIO cooking cream
50 g Parmesan cheese
1 onion
2 garlic cloves
Cooking oil
Rosemary
Salt
Black pepper

 

Season the lamb chops with salt, black pepper, and rosemary at least 40 minutes before cooking.
Clean and blanch the spinach in boiling water for 1–2 minutes. Drain well. Finely chop the spinach, onion, and garlic, and grate the Parmesan cheese.
In a heated pan with a bit of oil, sauté the onion for 1 minute. Add the garlic and cook for another minute, then stir in the chopped spinach. Cook for 2–3 minutes, then pour in the CREMIO cooking cream. Just before removing from heat, add the grated Parmesan and stir well.
In another hot pan, add 1 tbsp of oil and sear the lamb chops for 5–6 minutes on each side (adjust time to your preference). Sprinkle with salt, pepper, and rosemary.
Serve 2–3 chops per portion with the creamy spinach and a sprig of fresh green garlic.
